Roti Chat (with left over roti’s)

This roti chat is little different from other chat’s. Try this different version…..

Ingredients :

  1. Roti’s (left over) – 3
  2. Oil – 1 tbsp
  3. Ghee – 1 tbsp
  4. Urad dal – 1/2 tbsp
  5. Cumin seeds – 1/2 tbsp
  6. Mustard seeds – 1/2 tbsp
  7. Curry leaves – 1 spring
  8. Hing – pinch
  9. Coriander powder – 1 tbsp
  10. Cumin powder – 1 tbsp
  11. Red chilli powder – 1/2 tbsp
  12. Salt – as per taste

Method :

  • Tear roti’s into small pieces (1″ pieces) and keep aside.
  • Take a pan, heat oil and ghee.
  • Once it becomes hot add mustard seeds, when it starts spluttering add cumin seeds, urad dal, curry leaves and hing.
  • Add coriander powder, cumin powder, red chilli powder and salt. Fry for a min.
  • Add roti pieces and mix well.
  • Fry for a minute and serve into a serving bowl.

Note :

  • You can use freshly prepared roti’s also.
  • It will be little spicy. You can reduce the spicy ness of this chat buy reducing the powder quantities.

Mirchi Bajji/Mirapakaya Bajji

Mirchi Bajji is one of my favorite street snack not only for me for many Indians. In my childhood and college days, we never use to miss this snack, and one more item pani poori.
mmmm…..yummy….it brings the memories of my native place. so, let’s jump into the recipe.
There a many versions of making mirchi bajji. This is how I make.

Ingredients :

  1.     Besan  flour/Gram flour – 1 cup
  2.     Ajwain/vaamu, dry roasted- 3 teaspoons
  3.     Tamarind pulp – 2 tbsp
  4.     Salt – as per taste
  5.     Peanuts, dry roasted – 1/4 cup
  6.     Turmeric powder – Pinch
  7.     Red chilli powder – 1/3 tbsp
  8.     Salt – to taste
  9.     Oil – for deep frying
  10.     Baking soda – 1/4 tbsp

Method :

  • Now first make the filling masala.
  • Grind peanuts, ajwain, tamarind pulp, turmeric powder, salt in a blender and make a paste adding very little water.
  • Now make the batter for the bajji’s.
  • Mix Besan flour, Water, Salt, red chilli powder, baking soda and make a thick batter.
  • Wash and dry 10 green chillies.
  • Make a vertical slit in the middle of chilli, stuff the chillies with the filling you prepared above and set them aside.
  • Heat oil in a pan.
  • Now, one by one gently drop these stuffed bajjis into the oil.
  • Deep fry the Mirchi Bajji’s till they turn golden brown in color.
  • Move them to a paper towel covered plate.
  • Let them cool a minute or two.
  • Serve them with some lime juice and finely chopped onions.

Enjoy!!!

Note :

  • Remove the white stalk/vein in the middle and the seeds.
  • Te besan batter should be a little bit thick than dosa batter.
  • Add very little red chilli powder for besan flour to give  the taste to outer skin, but dont add to much.

Beetroot Cutlet

Beetroot Cutlet? hmmmm… first time I am using beetroot in this way. This is simple, tasty and healthy snack too. came out well. It’s tastes much better than it looks.

Ingredients :

  1. Beetroot (grated) – 1 1/2
  2. Potato – 1
  3. Salt – as per taste
  4. Red chilli powder – 1/4 tbsp
  5. Coriander powder – 1/4 tbsp
  6. Cumin powder – 1/4 tbsp
  7. Onions (chopped) – 1 small onion
  8. Chopped green chilli – 2
  9. Ginger garlic paste – 1/2 tbsp
  10. Chopped cilantro – a handful
  11. Oil – 1 tbsp
  12. Maida – 1 tbsp

Note :

  • Cooking oil is to shallow fry the cutlets – as required.

Method :

  • Wash, wipe and peal beetroot with a kitchen towel and grate it fine.
  • Pressure cook the Potatoes for 1 whistel. Peel the skin of potatoe and grate it fine.
  • In large bowl, combine grated beetroot, grated patato and  add remaining all the ingredients which is mentioned above.
  • Mix well.
  • Make the small balls out the soft dough.
  • Heat a tawa and spread a tbsp of oil and shallow fry on both sides till brown.
  • Reduce the flame to low and fry till they are crisp.
  • Serve hot with some ketchup.

Sesame Aloo

This recipe adapted from just cooking Madhurima.

I never made this rice before. This sesame aloo is so yummy,  in combination with the honey as she said. But in my house everyone are spicy lovers so I am avoiding adding honey. If u want u can add honey, I tried 2 aloo’s its really yummy. Let’s start making this yummy recipe …………..

Ingredients:

  • Baby Potatoes boiled – 15
  • Oil for deep frying
  • Garlic cloves – 2 (cut them into small pieces)
  • Tomato sauce – 2 tbsp
  • Soya sauce – 1/4 tbsp
  • Red chilli powder – 1/4 tbsp
  • Sesame seeds – 4 tbsp
  • Salt to taste
  • Lemon juice – 1/4 tbsp
  • Honey – 1 tbsp (Optional)

Method:

  1. First clean, boil Potatoes in pressure cooker for 1 whistle. Do not over cook the potatoes.
  2.  Cool and peel the skin.
  3. Shallow fry the baby potatoes in oil until golden brown. Set aside to drain on a kitchen napkin.
  4. Heat oil in a pan over medium flame once oil becomes hot add garlic cloves and stir.
  5. Add tomato sauce, red chilli powder, soya sauce and stir them for 2 min. add fried potatoes. Stir and fry for about 1 minute.
  6. Add dry roasted Sesame seeds, salt stir gently for 2 min.
  7. Add  lemon juice and honey (optional) Mix well for one more min
  8. Turn of the heat and shift into serving bowl and Serve hot.
